Apple Pie Parfait is like a apple pie in a glass. Topped with crunchy granola, it is a perfect dessert to make at the campsite or in the backyard. It can be made in the solar oven or on your stovetop.

Ingredients
  • 4 apples (firm cooking apples, such as Granny Smith)
  • ½ c water or apple juice
  • 1 tsp lemon juice
  • ¼ - ½ cup sugar
  • ½ tsp cinnamon
  • dash of salt
  • 3 TBS cornstarch
  • 4 oat and honey granola bars
Instructions
  1. Pre-heat the solar oven while preparing the ingredients.
  2. In a solar oven safe pot with a lid, add the water, sugar, cinnamon, salt, and cornstarch. MIx well so that everything is dissolved. If necessary, place the pan in the solar oven to heat and help dissolve the sugar and cornstarch. (The amount of sugar needed will depend on how sweet the apples are and how sweet you want the dessert to be.)
  3. Peel and core the apples and dice into small bite-size chunks. Toss with the lemon juice to keep from darkening.
  4. Add the chopped apples to the water/sugar mixture and stir to coat thoroughly.
  5. Cover the pot with the lid and put into the hot solar oven. Bake until the apples are tender, about 1½ - 2 hours.
  6. While the apples are baking, crush the granola bars into small chunks and place into a solar safe baking pan. After the apples are removed, place the pan of granola into the hot solar oven to toast. Bake the granola about ½ - 1 hours until brown and crunchy.
  7. When the apples and granola are cooled, layer the apples and granola into parfait dishes. Add a second layer of apples and top with granola. Can be served warm or cold.
Notes
The amount of time to bake the apples and toast the granola will vary depending on the type of solar oven used, the weather, and the amount of food cooked.


To make on the stovetop, simmer the prepared apples for ½ hour or longer on a low heat until the apples are tender. The granola can be toasted in the microwave for a few minutes or in a low oven for 10 -15 minutes until toasted.
