Solar Baked Cornish Hens

Cornish Hen

When I was a girl, I used to beg my mother to buy those “cute little baby chickens” to have for dinner.  But she never did (too expensive to serve to our large family).   Years later, I too found that these cute little things were too expensive to serve on a regular basis to my family.  But I always thought they were cute and would sometimes sneak them onto a special occasion menu.  So imagine my surprise one day when Rod walks in from the store (he’s our shopper) and proudly produces two little Cornish hens.  “There”, he said, “try those in your solar oven.”

Solar Baked Cornish Hens

  • 2 Cornish hens, thawed and wiped dry.

  • Margarine or butter

  • Seasoning of choice

  • 1/8 cup of water

Pre-heat solar oven while preparing hens.

Thaw and wipe dry the hens.  Rub with butter and seasoning.  Place hens in covered granite ware pot.  Place in hot solar oven.  Bake for 2 1/2  – 3 hours.

    Those look so yummy. I love Cornish Hens. I don’t make them often since they are expensive, but I do like to make them once in awhile. I don’t have a solar oven though, so cook them in a regular oven. I add some soy sauce to mine, along with putting some quartered onion in each one, plus Garlic, S&P. 🙂

    Yup, I love them, too, and discovered they were for special occasions, only, in my family. Could be a real budget buster… But, they’re so adorable on a plate — like quail, but I used to hunt those, myself, which kept the cost way down… Just added a Cornish hen recipe to my cookbook number 2 — Great minds… eh? Have a wonderful day.
