Strawberry Cobbler Baked in a Solar Oven

Strawberry Cobbler baked in a solar oven is the perfect dessert to serve to your guests on a hot summer evening.  Add a scoop of vanilla ice cream on top to make it a dessert your guests will not forget.

Strawberry Cobbler Baked in a Solar Oven   Strawberries! the fruit of summer. Strawberry shortcake. Strawberry lemonade. Strawberry ice cream. And don’t forget Strawberry Cobbler. I love recipes that are easy to make, especially when solar cooking. Strawberry Cobbler is one of my favorite desserts to cook when we take our solar cooker out on the road. I mix up the dry ingredients for the topping ahead of time so that I can just add the wet ingredients, stir it up, and set it out. And if you don’t have strawberries, substitute peaches or any other fruit available.

I baked my Strawberry Cobbler in a Solavore Sport Solar Oven, for 2 hours at an oven temperature of 300°F (149°C). The time it takes to cook in a solar oven depends on the type of oven being used, the type of food, and the weather.  To learn more, read

Strawberry Cobbler. This easy to make cobbler is loaded up with fresh strawberries, and topped with a sweet, vanilla cake that gets a crisp crust on the outside and is soft and buttery on the inside. Top with some vanilla ice cream for the ultimate treat!

Ingredients
  • Strawberry Filling
  • 1 lb strawberries diced
  • ½ cup sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon lemon juice
  • Topping
  • ½ cup sugar
  • 1 cup all purpose flour
  • ½ teaspoon salt
  • 1 tablespoon baking powder
  • 1 tablespoon vanilla extract
  • ½ cup milk or water
  • 4 tablespoons melted butter or margarine
Instructions
  1. Preheat solar oven while preparing the ingredients.
  2. Add the diced strawberries to a 2 qt ceramic baking dish, or a deep pie dish.
  3. Add the sugar, cornstarch, and lemon juice. Stir to coat the strawberries in the mixture. Let sit while preparing the cake topping.
  4. In a medium size mixing bowl add the sugar, flour, salt, and baking powder. Stir to combine.
  5. Pour in the milk, vanilla extract, and melted butter.
  6. Spoon the batter over the top of the strawberries.
  7. Bake in the solar oven for 1½ to 2 hours until the top is a light golden brown.
  8. Serve cobbler warm or room temperature. Top with ice cream for a special treat!
Notes
Bake in a regular oven for 35 minutes at 375°F(190°C) until the top is browned. Add ¼ extra liquid to the batter if baking in a conventional oven.

      Hello, That is a really good question. No, I did not cover the cobbler. As a rule, I never cover baked goods like cookies, brownies, cake, muffins, pies, and cobblers. I want the moisture to cook off. Use a pot with a lid for things like roasts, chicken, other meats, stews, and vegetables that you want & need to hold in the moisture and the heat to help tenderize and keep moist. Merry
